Steps

Five steps for the best texture

Prepare plenty of hot water

Prepare 3 to 4 liters of water in a large pot and bring it to a boil.

Add 350 to 400g of soba, enough for 2 servings, little by little while loosening the noodles.

Do not stir too much with chopsticks.

Add cold water

When the soba starts to float, add about 150ml of cold water.

Gently stir the soba 2 or 3 times with chopsticks.

Repeat this process twice.

The cooking time is about 2 to 3 minutes.
